Sinless Eggnog that taste Sinful!

Ahhhhhhhhhhhhhhhhhhhhhhhh......MAZING! This just happened!  The littles were asking for Eggnog last night and OF COURSE I didn't have any in the house so I started looking online for some healthy recipes and what did I find?  Believe it or not....NOTHING! Not one healthy Eggnog recipe I would consider Bellyfit.  So I decided to create my own and to my surprise.....SCORE!!! It's absolutely delicious and the kids LOVE it too (double SCORE).  Cheers! :)





Bellyfit Eggnog

Ingredients
4 Eggs
1/2 cup of coconut sugar or 2 squirts stevia
3 cups Pacific Brand Hemp Milk
1 1/2 tsp. nutmeg
1/4 tsp. cinnamon
pinch of himalayan sea salt
1 cup organic coconut milk
1-2 oz bourbon, cognac, or brandy, to taste (optional) 
1.2 oz. rum, to taste (optional)
1 tsp. pure vanilla extract

Method
1. In a large bowl, or in the Vitamix on the lowest setting, beat the eggs and sugar until fluffy. Set aside.

2. In a saucepan over low/medium heat, combine the hemp milk, nutmeg, cinnamon, and a pinch of salt.  Heat until steaming, stirring occasionally.  Do not it boil! 

3. Slowly temper the egg with the hot milk mixture over the egg yolks.  To do this, carefully pour the hot milk mixture over the egg mixture while whisking continuously to keep the eggs from scrambling.  Once mixed return the mixture to the saucepan.

4.Cook over medium-low heat until the mixture begins to thicken slightly, stirring constantly and scraping the bottom of the pan to prevent scorching. Do not let it boil!

5. Remove from the heat and and stir in coconut milk, vanilla extract, and liquors (if using).  

6. Chill in the fridge for at least a couple of hours, or overnight, before serving.   Stir well and serve. :) 


Prepare yourself for something creamy and dreamy!

Apple Cider Gravy, 2T-15 calories
Brown Rice Stuffing, ½ cup- 78 calories
Roasted Root Vegetables, ½ cup-82 calories
Steamed Green Beans, ½ cup-15 calories
Roasted Squash Soup, 1cup-128 calories
Total: 500 calories

Gravy, 2T-50 calories
Stuffing, ½ cup- 180 calories
Mashed Potatoes, ½ cup-220 calories
Green Bean Casserole, ½ cup-120 calories
Cream-Based Soup, 1cup-250 calories
Total: 1,015 calories

Brown Rice Cranberry Apple Stuffing
1 tablespoon olive oil or butter
1 medium green apple or pear, diced (about 1 cup)
2 stalks diced celery (about 2/3 cup)
1 clove garlic, minced
Dried or fresh thyme
Dried sage
1 Cup brown rice
1 cup hot cooked wild rice
1/2 cup freshly squeezed orange juice
1/4 cup dried cranberries or dried cherries
1/4 cup sliced green onions (green tops only)
Salt and black pepper to taste (optional)
PREPARATION:
1. Heat olive oil over medium-high heat in large saucepan. Add apple, celery and garlic. Cook and stir 5 minutes or until softened.
2. Reduce heat to medium-low and stir in thyme and sage. Cook briefly and stir in white and wild rice, orange juice and cranberries; cook 1 minute until heated through. Just before serving, stir in green onions and season with salt and pepper, if desired.
Serving Suggestion
Serve this stuffing in baked squash halves or alongside roast turkey or chicken.

Ryans Famous Turkey

Kristie's "SWEET" Sweet Yams
5-6 large yams
1/2 cup Organic Grade B Maple Syrup
2 TBS Butter
2 TBS Lemon Juice
1/2 teaspoon Sea Salt
Pepper to taste

Preheat Oven to 350 degrees
Wrap Yams in tin foil and cook until soft. Let cool.
Peel and cut yams into chunks and place in a 9-by-13 inch baking dish.
Combine remaining ingredients in a glass bowl and whisk together. 
Pour the mixture over the yams.
Toss to coat.
Cover with foil and cook for 20-minutes.

6 easy solutions to keep you on track this Holiday Season


It's never too late to start being better to you! 


We’ve highlighted six end-of-year challenges and provided solutions to keep you on track this holiday season. Early planning and preparation can help you continue to succeed into the New Year.
The holiday season is full of parties and social commitments, specialty foods, alcohol, stress, cold weather, lack of sleep, and a plethora of other distractions that can stand in the way of well-planned exercise and diet programs.
1. Loss of motivation. Focus on the results you have achieved thus far and set health and fitness goals for Christmas and the New Year.  Buy your New Year Party dress now a size smaller, hang it out for you to see each day, and see yourself in the dress on New Year’s Eve into the evening looking and feeling your best.  
2. Baby, its cold outside. Can’t make it to the gym because of bad weather? This is where having something in your home helps.  Or, a program to follow that is home gym friendly like The Belly Fit Club (www.thebellyfitclub.com). 
3. Turn away from the buffet. Seriously, don’t even look at it. Move as far away from the buffet as you can. One study on buffet eating behaviors observed that diners with higher BMIs were more likely to sit facing the buffet, use larger plates, and pile the food on before seeing all the dish options. You might want to grab a napkin, too. Diners with lower BMIs placed napkins in their laps, used smaller plates, chewed their food more per bite, perused the offerings prior to serving, and did not sit near or face the buffet. 
4. Think before you drink. Holiday beverages can contain an obscenely excessive amount of calories–with or without the alcohol. A cup of eggnog can deliver 350 calories, a creamy White Russian has 260 calories, while a medium pumpkin spice latte will set you back 380 spicy calories.  Lower calorie choices include a flute of champagne at 90 calories or wine spritzers–a diluted sparkling water and fruit mixture, even a “skinny” peppermint mocha comes in at 130 steaming calories. And as a reminder, alcohol can also interfere with proper nutrition, recuperative sleep, hydration levels, muscle recovery, stress hormone levels, and the immune system. 
5. Snug in their beds. Sleep is important for adults, eight good hours a night is typically recommended. Getting enough sleep helps control weight, keeps the immune system functioning optimally, reduces feelings of stress and stress-related illnesses, and helps put you in a better mood. 
6. Too stressed to exercise?  Rethink this excuse. Exercise has been shown to be effective in reducing stress levels with immediate and long term results. Exercise improves mood and sleep, and also reduces depression and anxiety which can often be triggered during the holidays.
